Our Little Getaway
Michael took me to a little cottage in North Devon for my birthday. Partly for my birthday, partly for some time together for a few days whilst he was back :) We found the place here and enquired further- this was because of Michael's R&R, we didn't want to be away for a whole week because he'd want to spend time with his family too. The owners were incredibly lovely and could work with our dates, so we went ahead and booked it. We were emailed all the details before hand so it all worked out rather smoothly. When we arrived, the keys were already in the door which was a nice touch- it made it feel very safe! We decided to explore, check it out...

Monday's recipe: Quiche of sorts.
I just made, with no understatement, the best egg dish I've ever eaten. I mixed a couple of recipes together (here, here, and here) to come up with a better one. I'ts kind of a quiche without a base? I guess?
Things you'll need:
3 eggs,
seasoning,
1 tablespoon of mustard (any you have in, I chose English)
1 tablespoon of creme fraiche
a good handful of spinach (or mixed salad greens as I use)
Cheese (of your choice) about three slices crumbled/grated.
2 slices of bacon per ramekin
Ramekin.
How to:
3 eggs,
seasoning,
1 tablespoon of mustard (any you have in, I chose English)
1 tablespoon of creme fraiche
a good handful of spinach (or mixed salad greens as I use)
Cheese (of your choice) about three slices crumbled/grated.
2 slices of bacon per ramekin
Ramekin.
How to:
- Precook the bacon
- Preheat oven 180 degrees. wilt spinach in a pan (with a little butter if you like, I did),
- whilst this is happening, crack your eggs into a cup and stir to scramble
- take it off the heat and stir in the creme fraiche and mustard.
- Some people line their ramekins with butter or spray, I didn't and it was fine but you can if you like
- once the greens mix has cooled, add the eggs to the pan (not to cook, just to mix so make sure it's off the heat), and season
- add most of the grated cheese to the mix, and stir it alllllll up.
- pour it into the ramekin, top with cheese
- make a ban marie (get a roasting dish, fill it up with water so that half of the ramekin is submerged - this means it'll cook more evenly) and pop into the oven for 25-30 minutes.
- test if it's ready by sticking a knife in and seeing if the mixture pours out.
If you make it, I hope you enjoy it as much as I did! It's definitely been added to my list of favourites. Other additions I was considering: no bacon or little pieces of bacon cut up in it (cooked prior though) or ham, or smoked salmon!

Weekly Roundup #27
Another busy busy week! One of the societies I am a part of has a big training recruitment and the training is happening both weekends so there's been training for the trainers, training for the supervisors and training of the new trainees. Not to mention the normal reading, presentation making, literature review reading and typing, paid work, subwarden work AND the other society work. Tad full on right now but if I'm not doing something all the time now I get a little bored, so it's for the best :) I don't think I've told you yet but for lent I've given up chocolate, sweets, biscuits/cookies and cakes. It doesn't leave much I have to admit, but it's going well so far. I never thought chocolate would be so hard but it really really is. I've never broken lent before and I know I won't this year, but I wish I would, aha.
I'm really missing home and Michael at the moment. Michael and I are going to London next week which will be amazing, because I haven't seen him in far too long (not to mention I can properly let my hair down now my lit review draft is done, and London in general is amazing!). Whenever I speak to my sister and hear about my niece I get a little bit sad because it's always such wonderful stuff that I'm missing! But I will soon be home for a long time, and I will soak her up then :)
My moma sent a package up today, so I think I might show you that tomorrow :) how's the start of your week been? Any big plans for the rest of it? I'm on duty tonight, so lets hope the students behave themselves!

My friend and I decided to have a sleep over the other evening and he brought his colouring pack and pencils, look at the creations I made! aha. I forgot how fun colouring is.

I think my boss and I are addicted to sushi. It's becoming such a habit.

Weekly Roundup #23
Technically this will be week 23 and 24 butttttt I'm not that worried. I didn't manage to post last Sunday because Michael didn't leave until late (and I like to soak up all the time I have with him) but now he's just in the shower and I thought I'd make a start!
