So, the lovely Kate from Morsellany gave me some leftover food as she went home for summer much earlier than I did, here, is what I did with a sweet potato and some mushrooms;

homemade chips! it's so easy and so incredibly tasty. Just peel and chop the veg, I'd usually put aubergine and pepper in also but I didn't have these ingredients and I was just trying to use everything up, drizzle in olive oil but not too much, season and bake on 180 for just over half an hour depending on how thin you've cut them.
